I can not resist cooking with Strawberries – and it is a treat to use them when they are just picked! Here are my favorite recipes that are creative, lightened-up and so so delish!

Ruby and Golden Beets team with Feta Cheese, Scallions & Pecans dressed with an Strawberry-Honey Balsamic Vinaigrette
Pairing with Strawberries: great complimentary textures and flavors. Continue layering with assertive sliced scallions, creamy and tangy feta cheese and crunchy pecan halves. The Strawberry-Honey Balsamic Vinaigrette adds just the right piquancy.

I’ve reinvented a classic french salad where a slice of garlic rubbed baguette slice is topped with goat cheese (baked until warmed through) and sits on top of greens with a vinaigrette dressing.Adding Strawberry Jam to the goat cheese adds a pop of color and natural sweetness. Complementary lettuces I chose are spinach, frisee and microgreens.
Making jam is fun, has less sugar and no preservatives – with true fruit flavor.

Storing Strawberries
Remove any too soft ones. Refrigerate Between Paper Towels in an Airtight Container.
Place your strawberries in a single layer between clean paper towels to soak up any excess moisture to keep them fresh. Store the strawberries in a produce keeper or an airtight container to help them stay fresh and avoid spoiling. Always keep the stems on the strawberries to protect the interior from moisture.
Freezing- Wash and dry the strawberries before removing the stems. If the hulled strawberries are big, cut them into halves or quarters. Arrange them on a tray in a single layer, ensuring they are not touching. Once frozen, transfer the strawberries to a freezer-safe bag or container…. easy!
