- Corn can be considered both a vegetable and a grain. When eaten fresh off the cob, corn is considered a vegetable, although it’s never really enjoyed the healthy reputation of its fellow produce because it tends to be high in carbohydrates. Yet it also contains resistant starch, a kind of prebiotic fiber that fuels a healthy gut, and antioxidants, among other essential nutrients.
- Corn is naturally gluten-free, it may cause fewer digestive complaints for people who are intolerant of gluten protein.
- Various types of sweet corn exist, each with their own nuanced flavor, texture, and sugar content.
- One medium ear of yellow sweet corn contains 99 calories, 3.5g of protein, 1.5g of fat, 21.6g of carbohydrates, 2.5g of fiber, and 4.7g of sugar.
- Nutritionally, corn contains Potassium, Vitamin C, Vitamin A, a mix of B Vitamins, as well a host of phytonutrients (which helps protect the body from disease.)

I like this color combo – minimalist; just yellow & green. I have added tiger striped green heirloom tomatoes are incredibly sweet and low in acid.
How do I get the corn to release in strips? There is a secret… refrigerate the corn, then cut strips with a sharp knife.
A Simple Summer Salad with Big Flavors! Quinoa is cooked fluffy with turmeric and local farm- fresh ingredients gets a topping of a quick Gingery Dressing.
Not only is Quinoa Gluten Free – but is so simple to cook! I add Turmeric for color and health values.
Crispy Romaine with a smoky essence – topped with Farm Fresh Veggies, Lemony Tahini Dressing and Garlic Sourdough Toasted Breadcrumbs.

The BEST cold corn soup! The difference from all the rest?
The recipe is mostly corn. No confusing ingredients which take away from the pure corn flavor.
As it turns out it’s light in calories, fat and sodium – yay!
This lush and velvety soup contains no dairy ~ with the addition of silken tofu, leeks, potatoes and lots of corn, a creamy soup that eats like a meal! Roasted Delicata Squash and Chives make the perfect garnish.
I’m loving a home made Pad Thai with loads of local summer veggies! Toss in fresh mint, peanuts and bean sprouts for a fresh crunch.

Quick Zucchini & Corn Sauté with Chipotle Maple Butter
The perfect Summer Side Dish when you are craving flavor and and easy preparation. Caramelized veggies are teamed with a sweet-smokey Maple Butter.
Ingredients
Sauté:
- 3 medium zucchini and summer squash, your choice!
- 2 ears fresh corn
- 1 1/2 teaspoon grapeseed oil, divided, or expeller pressed safflower oil
- 1/8 teaspoon sea salt, or to taste
- 1 1/2 tablespoons fresh parsley, cleaned, dried and coarsely chopped
Chipotle Maple Butter:
- 2 tablespoons unsalted butter, room temperature, I use organic
- 1 1/2 teaspoons chipotle in adobe, finely chopped
- 1 1/2 teaspoons pure maple syrup
Instructions
Chipotle Maple Butter:
- Cream together the butter, chipotles and maple syrup, set aside.
Sauté:
- Wash and dry zucchini and summer squash. Cut into long 1/2" lengths, then cut all into 1/2" dice. Strip corn, remove silk, cut corn in half. Place flat sides down on cutting board and cut kernels off the cob.
- Add 1 teaspoon of oil to a seasoned cast iron skillet, raise heat to medium-high. Add the zucchini/squash and quickly sir into the oil. Spread them in a flat layer in the pan.Do not stir! Let them become just golden on the bottom (about 3- 4 minutes.) Now - stir up and let them get just a little more color (caramelization) another minute or two.
- Move the zucchini/sqaush to the outside of the pan and add 1/2 teaspoon more oil in the center. Quickly add the corn, stir up in the oil - do not stir - let get golden and caramelized about 1 - 2 minutes. Stir ALL together.Should be very golden, yet NOT too soft.
- Add the Chipotle Maple Butter and stir in until it melts. Add sea salt to taste and parsley.Remove from heat and enjoy!

Some outstanding corn recipes! I have made the corn pudding, everyone loved it, had lots of leftovers for the next few days. Great texture and flavor. Made too the corn salsa which was easy. Blending some corn was interesting while being creamy and chunky, not too spicy. Looking forward to trying many recipes on this list. Thank you, Deb
