Quick Zucchini & Corn Sauté with Chipotle Maple Butter

The perfect Summer Side Dish when you are craving flavor and and easy preparation.
Caramelized veggies are teamed with a sweet-smokey Maple Butter.

I am using Zephyr Summer Squash (striped), Avocado Zucchini, Gold Rush Zucchini and Butter & Sugar Bicolor Corn.
Is Zucchini and Summer Squash the Same Thing?
- All zucchinis are squash, not all squash are zucchinis – Zucchini is actually a part of the summer squash family
- While they may be members of the same family, the appearance of these vegetables is what sets them apart
- yellow squash has a large bottom end and a tapered neck – and Zucchini, on the other hand, is usually straight throughout
- Summer Squash usually have a thicker skin and larger seeds than zucchini
- Botanically speaking, a zucchini (a type of squash) is definitely a fruit. Not only does it have and come from seeds, it grows on the flowering part of the zucchini plant
- Comes in so many shades and forms… long, star shaped, egg shaped, eight ball shaped, pattypan, crookneck, miniature and more!
An EASY way to remove corn from the cob!
Break the ear of corn in half – it will stand flat; cut with a serrated knife
Using Organic Butter (does have a nice yellow color), Chipotles in Adobo Sauce, and Pure Maple Syrup (not artificial pancake syrup please!
This butter is so quick to make and adds a hit of heat, and creamy sweetness! Chipotle’s have a rich, smoky flavor and a moderate to high level of heat.
You can double the recipe and use it on top of many grilled foods. Can be refrigerated in a log and used as a compound butter too.
Toss with grapeseed oil (has high smoking point) and let caramelize in a hot pan – do not be tempted to move around, best to let zucchini color.
Then – toss and finish cooking for one minute or two.
Raw corn kernels are aded to the center of the skillet with a mere 1/2 teaspoon grapeseed oil. Leave to caramelize, then stir all together.
The sauté is finished – – simply add the flavored butter, toss and serve… that was easy!

Quick Zucchini & Corn Sauté with Chipotle Maple Butter

Ingredients
Sauté:
- 3 medium zucchini and summer squash, your choice!
- 2 ears fresh corn
- 1 1/2 teaspoon grapeseed oil, divided, or expeller pressed safflower oil
- 1/8 teaspoon sea salt, or to taste
- 1 1/2 tablespoons fresh parsley, cleaned, dried and coarsely chopped
Chipotle Maple Butter:
- 2 tablespoons unsalted butter, room temperature, I use organic
- 1 1/2 teaspoons chipotle in adobe, finely chopped
- 1 1/2 teaspoons pure maple syrup
Instructions
Chipotle Maple Butter:
- Cream together the butter, chipotles and maple syrup, set aside.
Sauté:
- Wash and dry zucchini and summer squash. Cut into long 1/2" lengths, then cut all into 1/2" dice. Strip corn, remove silk, cut corn in half. Place flat sides down on cutting board and cut kernels off the cob.
- Add 1 teaspoon of oil to a seasoned cast iron skillet, raise heat to medium-high. Add the zucchini/squash and quickly sir into the oil. Spread them in a flat layer in the pan.Do not stir! Let them become just golden on the bottom (about 3- 4 minutes.) Now - stir up and let them get just a little more color (caramelization) another minute or two.
- Move the zucchini/sqaush to the outside of the pan and add 1/2 teaspoon more oil in the center. Quickly add the corn, stir up in the oil - do not stir - let get golden and caramelized about 1 - 2 minutes. Stir ALL together.Should be very golden, yet NOT too soft.
- Add the Chipotle Maple Butter and stir in until it melts. Add sea salt to taste and parsley.Remove from heat and enjoy!

What an intriguing recipe. With an abundance of summer vegetables, I made this recipe to rave reviews from my family and friends. So simple to make with lots of great tips. Now I know how to cut kernels from corn with efficiency! This dish tasted great almond, but the chipotle maple butter addition took the dish to another level! Made this as a side dish for a summer buffet get together and was the biggest hit.
