Turn your leftover turkey into a sensational meal! Out of season, roast chicken breasts on the bone (seasoned); cool, bone – and cut into cubes.
Bright lemony and peppery flavors compliment the earthy lentils and spinach. Sprouted lentils, available in health food stores, are more easily digestable and increases vitamins and micronutrients.
Mellow sweet onions and marinated grilled chicken are enhanced by a pungent gingery-sesame marinade which doubles as a dressing.
My ultimate latke recipe with more veggies for added color and crunch. The beets are optional, but I think your family will love the addition. Crispy on the outside, yet tender inside. Bake these treats in muffin tins for a lightened – up version of the fried potato pancake! (see below).
I think of this recipe as “healthy-comfort food.” Tomatoes, peppers, red wine.. goat cheese – “Modern Mediterranean” with local spring herbs.
Serve steamed or pan-fried. Vegan and delicious!
