Why Do My Egg Yolks Look Super-Orange in Color?

I use Pasture Raise Eggs!

Free range hens that have access to green, grassy pastures tend to lay eggs with darker yolks than their caged counterparts.
This too increases the color of the egg yolk, but also the nutrition that a consumer receives.
These pasture-raised eggs usually have nice orange yolks (the ones I use) but can be on the yellow side, can vary throughout the seasons.
These eggs contain double the amount of vitamin E and long-chain omega-3 fats. More than twice the amount of total omega-3 fatty acids.

Use the Toppings you like!

In the Mexican recipe: Huevos Rancheros –  you might find the addition of refried beans, salsa and queso fresco cheese
Sunny side up eggs cooked in rings
Sunny side up eggs cooked in rings – the eggs are cooked in the skillet until the whites have just set – then removed and placed on the corn tortillas to be baked in the oven with the cheeses.

Want beautifully round fried eggs?

Use pastry rings! Just brush the insides with a little oil and add to a cast iron pan – crack eggs in the middle and cook until set.

The Method:

  • Cook eggs in your seasoned cast iron skillet – brushed with a small amount of oil
  • Cook eggs until just set (will not be fully cooked) Remove partially cooked eggs from their rings and cast iron skillet.
  • YES – you can cook the eggs without the rings!!
  • Add tortillas to the skillet top each with some grated Mexican cheeses – top with the egg – sprinkle some more cheese around the whites
  • Place in your preheated oven and cook until the eggs are set how you like them and the cheese is bubbly
  • Add your toppings and drizzle with my Bloody Mary Hot Sauce!

Breakfast Fried Egg Tacos with Karen's Bloody Mary Hot Sauce
Wake up your taste buds with these savory tacos! Sunny side up fried eggs top tacos and a bevy of veggies and Mexican cheeses. Top with my homemade spicy hot sauce for the perfect chile-tang.

Ingredients

  • 4 whole corn tortillas*
  • 1 teaspoon extra virgin olive oil, divided
  • 4 large eggs, I use pasture raise for flavor and deep orange yolks
  • 12 tablespoons mexican grated cheeses, see note

Veggies & Add-Ons:

  • 4 tablespoons avocado, peeled, thinly sliced
  • 2 teaspoons scallions , chopped on the diagonal
  • 2 teaspoons pickled sliced red onions
  • 1 tablespoon sliced cherry tomatoes, multi-colored
  • 1 teaspoon cilantro , (or parsley) chopped
  • 1 teaspoon fresh or pickled jalapeño , thinly sliced
  • 2 teaspoons thinly sliced radishes, I use watermelon radish
  • hot sauce , see my recipe: Bloody Mary Hot Sauce

Instructions

  • Preheat oven to 350 degrees.
  • Brush your seasoned cast iron skillet with 1/2 teaspoon evoo and the insides metal rings if using (for round fried eggs.)
Set heat to medium. Add 4 eggs, spacing them (add to center of rings in skillet if using.)
Cook for two minutes until egg whites have set (yolks will finish cooking in the oven.)
  • Remove the eggs to a plate, wipe the skillet clean, brush skillet with remaining 1/2 teaspoon evoo. Add 4 tortillas and cook for one minute one each side until warmed through.
  • Add the tortillas to a baking tray. Top each with 1 1/2 tablespoons of grated cheese. Top each with the fried egg. Add 1 1/2 tablespoons extra grated cheese around the egg whites and tortillas. Bake in the oven for 5 - 7 minutes; or until the cheese is bubbly and the yolks are cooked to your desired doneness.
  • Garnish and Enjoy the Tacos:
  • Add your desired toppings to each taco and drizzle all over with the hot sauce.

Notes

*Tortillas: I use Vista Hermosa Corn Tortillas. They are gluten free, non GMO and organic with minimal ingredients and NO artificial preservatives. Delicious!
Mexican Cheeses: Use a mixture of cheeses or crumbled Queso Fresco cheese.
