What is Hearts of Palm Pasta?
Hearts of Palm is the inner core, or heart of the palm tree which is all harvested in an environmentally sustainable process to ensure the survival of each palm tree.
To make “linguine” the vegetables is cut into even stands.
As per package information:
One serving of hearts of palm pasta (1/2 cup) has 20 calories, 4 grams of carbs, and about 1 gram of protein. If you eat the whole package, which is easy, you’ve downed only 60 calories. Compare that to 1 cup of traditional wheat semolina pasta, which clocks in at 220 calories, 43 grams of carbs, and 8 grams of protein.
Texture wise, heart of palm pasta is naturally firm, fibrous, and a little crunchy, kind of al dente.
Softens as it cooks in the sauce.

How do you use this product?
Sold in pouches, I add to a bowl and soak in hot water 20 minutes.
Instruction say this is not necessary… I think soaking takes away some bitterness, although the flavor is considered mild, slightly sweet with a vegetal flavor.
Hearts of Palm Pasta is also very low in calories because they are mostly water and don’t contain the starchy carbs of regular noodles or the extra protein calories found in legume-based options.
Why am I using jarred Marinara Sauce?
Makes an easy and QUICK SAUCE! (and I am fond of Rao’s Marinara.)
Use homemade tomato sauce if you have some.
By adding Roasted Cherry Tomatoes – creates a nice tomato-y flavor (and roasts in a mere 12 minutes while you make the sauce!)
The Method:
- Soak Hearts of Palm Linguine in warm water
- While it soaks: Roast Cherry Tomatoes Halves and start the Sauce
- Sauté the sliced garlic in EVOO until softened, but not browned
- Add: Olives, Capers, Anchovies, Oregano and Chili Flakes; cook 3 minutes
- Add Marinara Sauce (my favorite is Rao’s), combine all and cook covered 5 minutes
- Add the Hearts of Palm Linguine (drained) and give a big toss – you’re done!
- Garnish with Roasted Cherry Tomato halves and Fresh Basil Leaves
To Serve:
- Add to individual bowls
- Top with the Roasted Cherry Tomato Halves and Basil Leaves
- PS: Italians do not add Parmigiano cheese if you make it with anchovies (Italians don’t usually use cheese on seafood pasta dishes.) Add if you like!

What is Puttanesca Sauce?
Puttanesca is a healthy Italian Sauce as the main ingredient is fresh tomatoes with all their lycopene antioxidants and a punch of umami – and other Mediterranean Diet Ingredients: olives, capers, garlic, anchovies and extra virgin olive oil.
A famous dish invented in the Italian city of Naples in the mid-20th century and made typically with tomatoes, olives, capers, anchovies, garlic and extra virgin olive oil.
Oregano and chili peppers are also seen in many recipes.
The sauce became well known and popular in the 1960s.
Origins:
- Some say that the name originated in the brothels of the Spanish Quarters (whore is puttana in Italian, hence puttanesca.
- Others claim it was invented in the 1950s in a famous Ischia restaurant one late night when a group of hungry customers asked the owner for pasta, who didn’t have many ingredients left.
- Some say say the modern name of this preparation refers to pasta ‘prepared as it comes’, that is, easy to cook, without frills or complicated preparation.

I created this recipe In Winter, after finding what I feel is the best Hearts of Palm Linguine. I do like Kitchen & Love better than Palmini (just my opinion.) All available in grocery stores and online. Kitchen & Love adds lactic acid, while Palmini adds citric acid, (both preservatives.)
I also make Puttanesca with Linguine on the summer with FRESH TOMATOES.

Karen’s Hearts of Palm “Pasta” Puttanesca
Ingredients
- 3 cups Hearts of Palm Linguine*, = 12 ounces
- 3 tablespoons extra virgin olive oil
- 2 tablespoon garlic, peeled and thinly sliced (use all!)
- 1/2 cup olives, pitted, I cut 1/2 in half, Gaeta or Kalamata
- 3 tablespoons capers, drained
- 3 medium anchovy fillets , chopped or minced
- 1/2 teaspoon dried oregano, crumbled with your fingers
- 1/4 teaspoon red chili flakes, or to taste (I like a little spicy)
- 1 /14 cups marinara sauce , I use Rao's
- 1/4 cup fresh basil leaves , or can use chopped parsley
Roasted Cherry Tomatoes:
- 12 medium cherry tomatoes, cut in half; I use red & yellow
- 1/2 teaspoon extra virgin olive oil
- 2 pinches each: garlic powder and sea salt
Instructions
- Add hearts of palm linguine to a big bowl, add very warm water to cover, Let stand 20 minutes then drain. (I use 1 1/2 packets; 12 ounces.) Make the Roasted Cherry Tomatoes.
- In a large skillet (I use enamel cast iron) add 3 T. olive oil and sliced garlic. Cook over low heat for 5 minutes to soften the garlic, do not color; very light golden edges ok. Add: Olives, Capers, Anchovies, Oregano and Chili Flakes. Cook over low heat to combine the flavors, stirring from tome to time for 5 minutes.
- Add the marinara sauce, stir all together. Cover and cook over low heat 5 minutes. Done! HINT: I let the dish stand here for a little off heat to penetrate the sauce into the "linguine."
Roast Cherry Tomatoes:
- Preheat oven to 375 degrees.Add the tomatoes cut side up on a parchment lined small baking tray. Drizzle with oil and sprinkle with garlic powder and sea salt.Roast for 12 – 14 minutes, until cooked and just a small touch golden.
Finishing & Serving:
- Add to individual bowls. Top with Roasted Cherry Tomatoes and Basil – enjoy!
