Karen's Hearts of Palm "Pasta" Puttanesca
Low-Carb Deliciousness! This amazing pasta alternative is tossed with an assertive sauce loaded with tomatoes, olive, capers, anchovies and garlic. A quick recipe using your favorite marinara sauce as its base.

Servings: 4 servings or 3 large bowls
- 3 cups Hearts of Palm Linguine* = 12 ounces
- 3 tablespoons extra virgin olive oil
- 2 tablespoon garlic peeled and thinly sliced (use all!)
- 1/2 cup olives pitted, I cut 1/2 in half, Gaeta or Kalamata
- 3 tablespoons capers drained
- 3 medium anchovy fillets chopped or minced
- 1/2 teaspoon dried oregano crumbled with your fingers
- 1/4 teaspoon red chili flakes or to taste (I like a little spicy)
- 1 /14 cups marinara sauce I use Rao's
- 1/4 cup fresh basil leaves or can use chopped parsley
Roasted Cherry Tomatoes:
- 12 medium cherry tomatoes cut in half; I use red & yellow
- 1/2 teaspoon extra virgin olive oil
- 2 pinches each: garlic powder and sea salt
Add hearts of palm linguine to a big bowl, add very warm water to cover, Let stand 20 minutes then drain. (I use 1 1/2 packets; 12 ounces.) Make the Roasted Cherry Tomatoes. In a large skillet (I use enamel cast iron) add 3 T. olive oil and sliced garlic. Cook over low heat for 5 minutes to soften the garlic, do not color; very light golden edges ok. Add: Olives, Capers, Anchovies, Oregano and Chili Flakes. Cook over low heat to combine the flavors, stirring from tome to time for 5 minutes. Add the marinara sauce, stir all together. Cover and cook over low heat 5 minutes. Done! HINT: I let the dish stand here for a little off heat to penetrate the sauce into the "linguine."
Roast Cherry Tomatoes:
Preheat oven to 375 degrees.Add the tomatoes cut side up on a parchment lined small baking tray. Drizzle with oil and sprinkle with garlic powder and sea salt.Roast for 12 - 14 minutes, until cooked and just a small touch golden.
