Tender yet crispy waffles enriched with pink applesauce, oats, warm spices and gluten free flour. The perfect brunch, breakfast or snack of the Fall season.

I suggest making the whole recipe. Freeze and remaining waffles ~ wrap in waxed paper and secure in ziplock bags
Pink APPLES:
Kissabel Rouge Apples have an ivory /yellow skin and the interior flesh are nuanced in natural bright pink tones. They have a nice crunch and sweet, berry-like taste.
I make the applesauce with these; 5 medium apples yields 2 cups of pink applesauce.
They cooked down beautifully, the applesauce is done in about 12 minutes.
The GMO-free apples are created using technology developed in France by IFO growers.
I found them by chance in my local Shoprite Supermarket in Stamford CT.
There was no sign, and the sticker said: Kissabel, so I bought one, suspicious it was going to be glorious pink toned inside. I was right! And I went back at bought all 13 remaining ones. I suspect they will be widely available in the U.S. in the future.

The orchard I visit and buy apples from Is Hidden Gem Orchards in Southbury CT. I Love their Pink Pearl Apples! (yes – pink inside!) Hidden Gem Orchards, a “boutique” orchard – 31 heirloom apple varieties are grown with more being added each year.
Pink Pearl apples are wonderful for baking, especially in open-topped tarts or in sauces (or waffles!) where their pink color can really shine.
To the apples, add 1/2 cup filtered water and just 3 tablespoons of pure can sugar. Cook for 10 minutes covered at a simmer, 3 minutes uncovered
Wet ingredients:
Eggs, Pure Vanilla Extract, Neutral Oil, Melted Butter, Milk and Pink Applesauce
Dry Ingredients:
Gluten Free Flour Blend, Baking Powder, Oats, Sea Salt, Sugar and Pumpkin Pie Spice

APPLESAUCE: Of course, make my delicious Pink Applesauce! (See below where to buy them.) OR Use an applesauce you like… some info about that: Mott’s Original Applesauce sweetens with High Fructose Corn Syrup – yuck, do not buy this!
If not making your own, best to choose an organic one, or an unsweetened one.
My Recipe is Gluten Free:
YES – you can swap out gluten free flour blend for regular flour!
(Oats are gluten free.. they add fiber, texture and flavor.)
MILK: I use full fat milk, your choose a dairy free alternative if you like.
I LOVE it chunky – for the waffles I mash it to for a creamier texture
Yummy Batter!
Simply add the WET ingredients in a large bowl, whisk well.
Add the DRY ingredients and stir with a rubber spatula.
Heat up you Waffle Maker!
Nothing fancy… I have had this waffle maker for over 20 years and it still works!
Makes 7″ round waffles.

Karen’s Fall Pink Applesauce Waffles
Ingredients
Wet Ingredients:
- 1 cup pink applesauce*, see my recipe
- 2 large eggs, I use pasture raised
- 3 tablespoons neutral oil, expeller pressed, such as safflower
- 2 tablespoon unsalted butter, melted
- 1 teaspoon pure vanilla extract
- 1 1/4 cup milk, or you favorite non-dairy
Dry Ingredients:
- 1 1/2 cups gluten free flour blend*, can use regular flour
- 1/2 cup rolled oats
- 2 tablespoons pure cane sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon pumpkin pie spice
Instructions
- Make my Pink Applesauce, or use a lightly sweetened one (without high fructose corn syrup) or an unsweetened organic one. Use room temperature or cold applesauce.
- Add WET ingredients to a large bowl. Mix well with a wire whisk.
- Add DRY ingredients and fold in with a rubber spatula.
- Heat up the waffle maker!Brush both sides sparingly with some extra neutral oil with a pastry brush.Add 1/5the of the batter to the waffle maker – I use a 4 ounce soup spoon.
- Cook until golden and puffed on both sides, remove to a plate, continue with the next 4 waffles. Hint: Make sure the heat stays consistently hot.
- Serve with Real Maple Syrup!Garnish with apple slices, can top with a dollop of applesauce too!
