Weeknight Filet of Sole with Mustard Sauce

A quick & tasty meal finished in minutes ~ stir together a Mustard, Herb, Garlic & Mayo Sauce, coat the fish and simply broil… genius!!

Transform Fresh Fish Fillets in minutes with this clever, easy topping

A little taste of France ~ and updated: Filets de flet à la moutarde for today’s taste.

Keep the fillets tender with the herbal, creamy coating and broil 4 inches from the heat source. In just a few minutes ~ Voilà !! dinner is ready.
I like to make my side dishes before, so when the fish is done, dinner is served!

For the sauce/topping I mixed together a good quality mayonnaise, dill, parsley, grainy mustard and softened garlic ~ can make this ahead of time.

Simply schmear this cold sauce over the fillets and broil.. warms to a delicious topping without too much fat
Ingredients for the quick topping/sauce: Softened Garlic Confit (see recipe), Mayonnaise, Whole Grain Mustard, Dill, Parsley and Garlic Chives
Place fillets on a sheet pan brushed with a little extra virgin olive oil. Top with the Herbal Mustard Sauce and broil close to the heat source.

Garlic Confit is a “must have” recipe for every cook. Luscious softened garlic surrounded by a blend of healthy oils. Use the cloves and garlic- infused oil for a subtle yet rich flavor. Ok – I’m obsessed with garlic! See the recipe. (I’ve used 1 T. of garlic in the topping/sauce for the fish.)
Great served with Crispy, Petite Potatoes and Asparagus Sautéed with Radicchio
