Simple Romaine Salad with Shaved Cucumbers and Radishes with a Preserved Lemon Vinaigrette
Lots of crunch with a Zesty Preserved Lemon Vinaigrette
Shaving vegetables brings a nice look and texture to a salad. Shave with a sharp, wide vegetable peeler… so easy and fun.
I like to have watermelon and purple daikon radishes in my fridge, they are great keepers and add a blast of gorgeous color and zippy flavor.
Ingredients
cleaned and dried
persian type
I use watermelon radishes and
purple daikon
(use about ½ cup in this recipe)
Instructions
Make the Preserved Lemon Vinaigrette
Prepare Vegetables:
Leave inner small romaine lettuce leave whole,
cut the rest into bite sized pieces (can use all small leaves.)
Shave the cucumbers lengthwise with a vegetable peeler.
Can also use a mandoline.
Wash and dry radishes, peel if you like.
Shave thinly into circles.
Plate the romaine on individual plates, or add to a serving bowl.
Add the shaved cucumbers, bending them into pretty shapes.
Top with radishes and sprinkle all over with microgreens.
Drizzle with the Preserved Lemon Vinaigrette – enjoy!
