
Quick Caesar Dressing You Will Love!
This method takes away the raw egg yet adds all the zesty flavors!
Add all ingredients to a bowl, whisk in extra virgin olive oil until nicely emulsified.
Ingredients you will use:
Fresh garlic, grainy mustard & dijon mustard, fresh lemon juice, worcestershire sauce, grated parmesan cheese, natural mayonnaise, anchovies, freshly cracked pepper and extra virgin olive oil.
Use the best ingredients!
I do not use ingredients with “Natural Flavors” – so read your labels.
Natural Flavors are anything but natural, they are chemical additives.

Quick Caesar Dressing You Will Love!
All the zesty Caesar flavors quickly whisked without raw egg yolks. PS: I like it garlicky!
Servings: 12 3/4 cup; 1 tablespoon portions

Ingredients
- 2 teaspoons fresh garlic peeled, finely grated
- 1 teaspoon grainy mustard
- 1 teaspoon dijon mustard
- 1 1/2 large anchovy fillets (from a jar)
- 1 1/2 teaspoons worcestershire sauce* (without “natural flavorings”)
- 1/8 teaspoon freshly cracked black pepper
- 1/4 cup fresh lemon juice
- 5 tablespoons mayonnaise** (without “natural flavorings”)
- 4 tablespoons Parmigiano-Reggiano cheese finely grated
- 2 tablespoons extra virgin olive oil
Instructions
- To a medium sized bowl, add the first 7 ingredients – garlic through lemon juice. Give a big stir with a wire whisk and let stand 15 minutes to macerate the flavors.
- Add the mayonnaise and whisk in until creamy. Add the Parmigiano-Reggiano and whisk in.
- Measure the olive oil and stream in slowly while whisking until creamy and emulsified.Taste for salt – add if needed.Store in an airtight glass container in the refrigerator. Will keep for up to one month. The recipe can be made as well in a 4 cup food processor.
