Strawberry Shortcake Frozen Yogurt

A COOL take on “strawberry shortcake.” Creamy and refreshing on a hot Summer’s day – with Brown Sugar Shortcake Pieces Folded in! It’s Gluten~free.

My obsession right now! I found the best tasting strawberries locally at a farmers’ market.

It’s fun to experiment with ice cream flavors at home!

This mix-in idea came to me as I returned home with a quart of just picked strawberries. Their color was insane! Biting into one – a dark red-ruby color throughout – perfectly ripened and summer-sweet.

I initially thought of Strawberry Shortcake – not the Good Humor one I ate as a kid … do they still sell that?? Yes they do. I found the ingredient list and it’s posted on the bottom of this blog. It’s not pretty.

Once you have invested in a ice cream machine (they really are not too expensive), making the flavored bases is really simple… and fun! In Summer there is a plethora of gorgeous fruit, all which do justice in a frozen yogurt or ice cream. I make Blueberry, Peach, Apricot, Blackberry, Raspberry and love a Key Lime one just to name a few.

Mix-Ins change the texture with chunks of interesting textures.
I’ve recently added chunked Sugar Cookies into my Blueberry mixture with great success ~ so here goes some light yet crispy Shortcakes folded into the Strawberry mixture!

All Strawberry flavor here! My Frozen Yogurt’s are lighter than ice cream with no egg yolks or heavy cream.

Homemade is best with minimal ingredients…
all which you can pronounce!

Good Humor Strawberry Shortcake Ingredients:
(I would eat two ingredients on this whole list! Nonfat Milk & Salt.)
Well Maybe Strawberry Puree, yet it’s preserved with Citric Acid, so no.
Yuck!
Ingredients: NONFAT MILK, CAKE CRUNCH [BLEACHED WHEAT FLOUR, SUGAR, PALM OIL, COCONUT (SODIUM METABISULFITE TO PROTECT QUALITY), SALT, SODIUM BICARBONATE, ARTIFICIAL FLAVOR, SOYBEAN OIL, RED 40 LAKE, SOY LECITHIN, RED 3, RED 40], CORN SYRUP, WATER, SUGAR, PALM OIL, SOYBEAN OIL, COCONUT OIL, LESS THAN 2% OF: WHEY, STRAWBERRY PUREE, CITRIC ACID, MONO AND DIGLYCERIDES, LOCUST BEAN GUM, GUAR GUM, NATURAL AND ARTIFICIAL FLAVOR, RED 40, POTASSIUM SORBATE (PRESERVATIVE), CARAMEL COLOR, VITAMIN A PALMITATE.

The Ingredients for my Strawberry Frozen Yogurt are minimal. I do love the texture the shortcakes lend; yet the frozen yogurt is delicious without them too!
My Ingredients:

  • fresh strawberries ( I used just picked from an orchard)
  • pure cane sugar
  • brown rice syrup (can use non-gmo corn syrup or Lyle’s syrup)
  • filtered water
  • sea salt
  • fresh lemon juice  
  • buttermilk 
  • greek yogurt ( I used full fat)
The frozen yogurt mixture – ready to refrigerate until cold
The Brown Sugar Shortcake Dough rolled out 1/2 inch thick; cut & bake…
These are gluten-free! Can also use regular flour.
The baked Shortcakes ~ cool and crumble into chunks fold into the frozen yogurt at the last step
