I LOVE Making flatbreads in my kitchen!
The process is easy and gratifying. I like the feel of the dough; smooth and silky – and the aroma of bread baking in the oven is so irresistible!
Method:

Proof yeast, takes about 10 minutes until bubbly

Add yogurt, flour and sea salt and form into a ball

Flour your work surface and knead for 10 minutes (can use a stand mixer too with dough hook)

Add to an oiled bowl, cover and let rice until doubled, about 1 hour

Cut into 4 even pieces, form circles and roll until 1/4” thick

Indent with your fingers (bumpy is good!) – brush with EVOO and sprinkle generously with Za’atar seasoning

Bake until puffed and golden 5 – 7 minutes

Karen's Middle Eastern Za'atar Flat Bread
This easy freshly baked manakish dough is topped with Za'atar seasoning and EVOO. Puffs beautifully with golden crisp edges. Perfect even for a beginner!
Ingredients
- 1/2 cup warm water, 110 - 115 degrees (use digital thermometer)
- 1 1/4 teaspoons yeast
- 1 teaspoon pure cane sugar
- 2 1/2 tablespoons plain yogurt
- 1 1/2 cup flour, I use organic
- 1/2 teaspoon sea salt
Za'atar- EVOO Topping:
- 2 teaspoons extra virgin olive oil
- 1 1/2 teaspoons Za'atar
Instructions
Activate Yeast:
- Dissolve yeast and sugar in warm water (110 degrees; I use a digital thermometer) stirring with a fork. Let stand until bubbly, about 10 minutes.
Dough by Hand:
- Add this mixture to a medium sized bowl. Add the yogurt, then flour by the half cup, mixing with a wooden spoon. When all has been added, pull together the dough with your hands.Place the dough (will be a little sticky) on a lightly floured work surface and knead dough for at least 10 minutes. Indent dough ball with a finger, if indent stays, keep kneading.
- Add dough to a lightly oiled medium sized bowl and cover with plastic wrap or damp towel. Set aside until doubled in size.
Shape and Cook Flatbread:
- Preheat oven to 425 degrees. Divide dough into 4 equal pieces. Shape into rounds and roll each 1/4 inch thick. Add to baking pan or pizza stone. Make indents with your fingers over dough, brush with EVOO and sprinkle liberally with Za'atar.
- Bake until puffed and golden 5 - 7 minutes. Cool on a wire rack. Serve whole, or cut into triangles.
- Dough can be made in stand mixer with dough hook, set for about 8 minutes.
Notes
Resting time for the dough to rise is approximately 1 to 1 1/2 hours depending on humidity and temperature in your home.
