Karen's Middle Eastern Za'atar Flat Bread
This easy freshly baked manakish dough is topped with Za'atar seasoning and EVOO. Puffs beautifully with golden crisp edges. Perfect even for a beginner!

Servings: 8 1/2 flatbread serving
- 1/2 cup warm water 110 - 115 degrees (use digital thermometer)
- 1 1/4 teaspoons yeast
- 1 teaspoon pure cane sugar
- 2 1/2 tablespoons plain yogurt
- 1 1/2 cup flour I use organic
- 1/2 teaspoon sea salt
Za'atar- EVOO Topping:
- 2 teaspoons extra virgin olive oil
- 1 1/2 teaspoons Za'atar
Shape and Cook Flatbread:
Preheat oven to 425 degrees. Divide dough into 4 equal pieces. Shape into rounds and roll each 1/4 inch thick. Add to baking pan or pizza stone. Make indents with your fingers over dough, brush with EVOO and sprinkle liberally with Za'atar. Bake until puffed and golden 5 - 7 minutes. Cool on a wire rack. Serve whole, or cut into triangles.
Dough can be made in stand mixer with dough hook, set for about 8 minutes.
Resting time for the dough to rise is approximately 1 to 1 1/2 hours depending on humidity and temperature in your home.
