Ingredients
- 3/4 cup strained yogurt regular or greek
- 1 teaspoon fresh garlic finely grated or minced
- 1/2 cup cucumbers 1/4" dice
- 1/8 teaspoon sea salt
- 1 tablespoon scallions greens cut into fine rings
- 1 tablespoon fresh parsley minced
- 1 tablespoon fresh mint minced
- 1/4 teaspoon pink peppercorns ground
- 1/4 teaspoon sumac
- 1 teaspoon fresh lime or lemon juice
- 2 teaspoons extra virgin olive oil (optional)
Instructions
- Add cucumbers to a small bowl with the salt; rub in. Let stand 10 minutes, then add to a paper towel and squeeze dry.
- Add cucumbers and all of the ingredients to a small bowl and mix well.Refrigerate, covered to blend the flavors. Taste for seasonings. Add EVOO if you like.
