Quick Herbal Tzatziki Sauce

Herbal Cucumber Tzatziki Sauce
This Creamy Yogurt Sauce is light, tangy and zesty with herbal notes. Cucumbers are quickly salted, then patted dry and added to the mix.

Ingredients 

  • 3/4 cup strained yogurt , regular or greek
  • 1 teaspoon fresh garlic, finely grated or minced
  • 1/2 cup cucumbers, 1/4" dice
  • 1/8 teaspoon sea salt
  • 1 tablespoon scallions, greens cut into fine rings
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon fresh mint, minced
  • 1/4 teaspoon pink peppercorns, ground
  • 1/4 teaspoon sumac
  • 1 teaspoon fresh lime or lemon juice
  • 2 teaspoons extra virgin olive oil, (optional)

Instructions 

  • Add cucumbers to a small bowl with the salt; rub in. Let stand 10 minutes, then add to a paper towel and squeeze dry.
  • Add cucumbers and all of the ingredients to a small bowl and mix well.
    Refrigerate, covered to blend the flavors. Taste for seasonings. Add EVOO if you like.
