Add cucumbers to a small bowl with the salt; rub in. Let stand 10 minutes, then add to a paper towel and squeeze dry.
Add cucumbers and all of the ingredients to a small bowl and mix well.Refrigerate, covered to blend the flavors. Taste for seasonings. Add EVOO if you like.
