Peanut Butter Energy Bites – with Chocolate Drizzle

Simple to make ~ these bites are loaded with nutrients to keep you going during the day, or the perfect not-too-sweet, pop-in-your-mouth treat I love for dessert.

Just the right amount of sweetness – drizzle with a super-dark chocolate, 85 – 90% cocoa

Ingredients

  • Energy Bites:
  • ½ cup peanut butter, Plus 2 tablespoons, unsalted, non gmo
  • 1 tablespoon raw honey
  • 1 tablespoon coconut palm sugar
  • 1 ½ tablespoons ground flax seeds
  • ½ cup granola, low fat and low sugar - pulsed until finely ground (see my recipe!)
  • 1 tablespoon hemp hearts
  • 1 tablespoon sesame seeds, lightly toasted, optional
  • 3 large dates, pitted and finely chopped
  • ¼ cup walnuts, finely chopped, or your favorite nut
  • ⅓ cup finely shredded coconut, lightly toasted - DIVIDED in half
  • Chocolate Coating:
  • 1.5 ounces dark chocolate, chopped, about 3 tablespoons (look for 82% - 90% cocoa)
  • ½ teaspoon coconut oil, organic

Instructions

  1. Look for organic and non-gmo ingredients.
  2. Make the Bites: Add peanut butter, honey and coconut palm sugar to a large microwaveable bowl. Microwave for 30 seconds at 50% power. Stir up with a rubber spatula to combine and dissolve sugar.
  3. Add remaining ingredients for the bites; ground flax, granola, hemp hearts, sesame seeds, dates, walnuts and HALF of the coconut. Mix well with a rubber spatula. Refrigerate until firm, about 30 minutes.
  4. Roll Into Balls (bites): Using a 1" cookie scoop, dip scoop into the mixture, rounding the top, not level. Place dough in the palms of your hands and roll into a ball. Place each ball on a waxed paper lined rimmed baking sheet, or plate. Place remaining toasted coconut on a small plate. Roll each bite in coconut to coat. Continue making the bites, yields about 22.
  5. Make Chocolate Glaze for Coating: Place chocolate and coconut oil in a 1 cup bowl suitable for the microwave. Microwave for 60 seconds at 50% power. Stir up will a fork until very smooth.
  6. Space out the bites in the tray. Use a small spoon, drizzle the chocolate glaze over the bites, letting it drip down the sides. Let harden at room temperature, then place in an airtight waxed paper lined glass container, seal tight and refrigerate.
  7. Suggestions: Can substitute Chia Seeds if you like for part of the ground flax. For Nut-Free: use Sunflower Nut Butter and omit the walnuts. Bites can be rolled in finely ground nuts or cocoa powder.
  8. Makes: about 22 bites
