Peanut Butter Energy Bites – with Chocolate Drizzle

A better alternative to candy. Who doesn’t love this chocolate ~ peanut butter flavor combination??
Simple to make ~ these bites are loaded with nutrients to keep you going during the day, or the perfect not-too-sweet, pop-in-your-mouth treat I love for dessert.

These no-bake treats are a snap to make and naturally Vegan and Gluten Free.
Perfect for having on hand for snacking ~ or gift giving.

So what’s in these delectable bites?
I start with Organic Smooth Peanut Butter – and then add a touch of sweetness with Coconut Palm Sugar and Raw Honey (for vegans, can use brown rice syrup.) Then, all in one bowl add ground Walnuts, minced fresh Dates, ground Granola (see my recipe!), ground Flax Seeds, Hemp Hearts, Sesame Seeds and Toasted Coconut.

I do not add too many dried fruits (dates) in this recipe, just enough for natural sweetness and binding power… my stomach can not handle too much.

All is simply combined and refrigerated until cold.
Scoop with a 1″ cookie scoop (a culinary life saver!) Roll into balls, then coat with the remaining toasted coconut.
Store in the a wax paper lined sheet in a glass container with a good seal and place in the refrigerator.

The Final Touch ~ Drizzle with Chocolate:
Make the coating, simple melting chopped dark chocolate with a bit of coconut oil. Drizzle over each peanut butter “bite” and let harden.
Since these bites are not very sweet, a chocolate flavor here adds the perfect touch.

Ingredients for the Bites (without chocolate)
Mix all together in a single bowl
Refrigerate the mixture, then scoop and roll into a ball ~ see the rounded top
Roll in the remaining toasted coconut – then top with the chocolate drizzle
