The most flavorful Cajun Seasoning Blend with a nice spicy kick!
See the important ingredients that make it special.
Salt-free ~ add salt when needed.
- 4 teaspoons freshly ground black pepper
- 4 teaspoons dried granulated garlic
- 2 tablespoons dehydrated toasted onion
- 1 teaspoon dried lemon peel
- 1 tablespoon red chile flakes
- 1 teaspoon chipotle chile powder (gives a nice smoke essence)
- 1 1/2 teaspoon dried thyme
- 1 teaspoon ground bayleaf
- 1/2 teaspoon ground cloves
The method depends on if you are grinding your own spices OR purchasing them ground.
To make: Combine all ingredients and store in an airtight container in a cool, dark place.
Like it spicier? Add a pinch of freshly ground cayenne pepper.
I grind my own spices to achieve the perfect consistency.
I use a spice grinder, and grind these herbs and spices so they have a fine coarsely-ground consistency – but not too ground that it’s a powder.
When spices are ground right before using – the best and freshest blend is achieved.
And – the freshness of the spices is important too!
Lemon Rind: You can dehydrate the peels, then grind.
Alternately – finely grate the rind, place on a piece of parchment paper
and air dry in the sun.
This is a mildly spicy blend – want more kick? – add a touch of cayenne pepper.
This is a salt-free blend. I add a touch Himalayan Pink Sea Salt when using the blend.
Use for blackening, and an all-purpose seasoning.
