Fall Salad with Chèvre and Apples

A salad to “fall” in love with! Starring Fall ingredients like Radicchio, Pink Pearl Apples, Pink Radishes, Delicate Squash and teamed with Chèvre Cheese and Pistachios. Dress the salad with My Shallot-Thyme Vinaigrette.

Waldorf Salad with Roasted Delicata Squash, Kale and Apples

This classic American salad gets a revamp with a lighter taste. Lots of crunch from the seasonal apples, celery and walnuts with mellow additions ~ kale, roasted squash, grapes and a creamy cinnamon yogurt drizzle.

Garlic Cheesy Toast with Garlic Confit

What’s better than homemade macaroni and cheese? Here’s a recipe that is creamy, rich and has a crunchy topping that is irresistible! (Awesome Gluten-Free option too.) Adding cubes of Butternut Squash and Apples makes for an interesting, updated Fall Macaroni and Cheese. Adds interest and depth of flavor.

Sweet Potato Tater-Tots with Tortilla Crumbs ~ Hot Sauce Honey-Butter Glaze and Blue Cheese Dip

Crispy tater-tots with a healthy profile. Rolled in multi-grain tortilla chips and baked- served with a Honey-Hot Sauce -Butter Glaze and Blue Cheese Dip.

MAINS:

Butternut Squash Gnocchi ~ It’s Gluten Free

These pillowy gnocchi include roasted butternut squash in the dough and also in the final dish ~ serve with simple browned butter and fresh herbs. A Fall-inspired recipe with healthy ingredients.

Shrimp with Charred Brocollini and Shiitake “Bacon” – Browned Butter Balsamic Drizzle

A skillet dish with an amazing flavor combination – healthful and colorful. Shiitake “Bacon” is a game changer – my tasters said taste just like the real thing… but Vegan. Broccoli is in season now through November yet available year-round.

Delicious Sheet Pan Chicken & Vegetables with Apple Cider Glaze

All cooked on one pan! Chicken, Delicata Squash Rings and Shallots roast in the oven and produces a delicious simple dinner.
Make the Apple Cider Glaze on the stovetop as the sheet pan cooks.
In the style of French Chicken Normandy… this is a genius sauce… easy too!
