SOUPS:
A healthy Vegan soup with a creamy texture from the celery root (celeriac) and potatoes. Delicious and Silky Smooth. Dairy Free. Add a swirl of Cashew Cream for a decorative touch.
Here is how I make a wonderful, hearty and healthy Vegetable Soup with Mediterranean ingredients. 6 cups of vegetables in this soup ~ use your favorite Fall varieties. Basil, Kale & Chive Pistou adds an extra layer of flavor.

A bevy of vegetables enrich this soup; ginger adds a boost of flavor with powerful anti-inflammatory and antioxidant properties. Add any Fall root veggies of winter squash – delicious!

Fall’s produce comes together in this simple salad with bold flavors.
A delicious and healthy Fall Salad with Caramelized Pears, three Greens, julienned Purple Carrots, Pecan Halves, Pomegranate Seeds and an awesome Zesty Garlic Confit Vinaigrette.
A Zesty-Lemony Vinaigrette with mellow Garlic Confit ~ softened Garlic and Oil. I’m using Meyer lemons. I have a good stash of end-of-summer garlic I use for the next few months.
I’m adding my Garlic Confit to the Salad section ~ It adds so much flavor to all salad dressings you will make this season!
A salad to “fall” in love with! Starring Fall ingredients like Radicchio, Pink Pearl Apples, Pink Radishes, Delicate Squash and teamed with Chèvre Cheese and Pistachios. Dress the salad with My Shallot-Thyme Vinaigrette.
This classic American salad gets a revamp with a lighter taste. Lots of crunch from the seasonal apples, celery and walnuts with mellow additions ~ kale, roasted squash, grapes and a creamy cinnamon yogurt drizzle.
COMFORT FOODS: (we need right now!)
This Garlic Toast takes garlic bread to a new level! Sourdough Bread gains flavor from the outdoor grill – kissed twice with garlic… Garlic Confit Oil and Softened Garlic Confit Cloves.
A little soft on the inside, crispy around the edges…not quite a “toast” ~ just the most DELICIOUS garlic bread/toast you ever had! And, quite simple to prepare!
What’s better than homemade macaroni and cheese? Here’s a recipe that is creamy, rich and has a crunchy topping that is irresistible! (Awesome Gluten-Free option too.) Adding cubes of Butternut Squash and Apples makes for an interesting, updated Fall Macaroni and Cheese. Adds interest and depth of flavor.
Crispy tater-tots with a healthy profile. Rolled in multi-grain tortilla chips and baked- served with a Honey-Hot Sauce -Butter Glaze and Blue Cheese Dip.
MAINS:
These pillowy gnocchi include roasted butternut squash in the dough and also in the final dish ~ serve with simple browned butter and fresh herbs. A Fall-inspired recipe with healthy ingredients.
A skillet dish with an amazing flavor combination – healthful and colorful. Shiitake “Bacon” is a game changer – my tasters said taste just like the real thing… but Vegan. Broccoli is in season now through November yet available year-round.
All cooked on one pan! Chicken, Delicata Squash Rings and Shallots roast in the oven and produces a delicious simple dinner.
Make the Apple Cider Glaze on the stovetop as the sheet pan cooks.
