Salad Wedge with Chimichurri Dressing, Feta, Radishes and Pepitas

An easy salad with a good crunch that is simple and delicious!
Transforms the ingredients of Chimichurri into a healthy and delectable creamy dressing.

Ingredients

  • 1 medium head iceberg lettuce, organic, cleaned and dried
  • ½ cup feta cheese, sliced
  • ¼ cup pepitas, roasted with a touch of sea salt
  • ½ cup micro greens
  • 1 recipe Chimichurri Dressing, will have some extra

Instructions

  1. Remove the core of the head of lettuce, and cut into 4 large wedges. (Can use romaine lettuce.) Place the wedges in a large platter to fit. Pour Chimichurri dressing over. Top with feta slices, sliced radishes, micro greens and pepitas.
