Pickled Tomatillo Crema

Ingredients

  • 2 tablespoons tomatillos, husked, small dice
  • 1 tablespoon fresh lime juice
  • 1 pinch sea salt
  • 1 pinch sugar
  • ¼ teaspoon fresh jalepeno, minced
  • ½ teaspoon fresh rosemary, minced (optional)
  • 2 teaspoons fresh celery leaves, minced
  • ½ cup low fat sour cream

Instructions

  1. In a small bowl, mix together the tomatillos, lime juice with a pinch of salt and sugar.
  2. Stir, let stand 10 minutes. Add the rest of the ingredients, and mix well.
  3. Place in a covered container and store in the refrigerator.
