Mine are non-dairy (vegan.)

You can make with sweetened condensed milk too and milk chocolate.
I USE sweetened condensed coconut milk and dark chocolate.

  • I am not vegan… just enjoy them this way!

What are Almond Joy Bars?

A chocolate candy bar filled with a sweet chewy center dipped in chocolate with a whole almond on top. I dip in dark chocolate… traditionally used is milk chocolate.

I use Sweetened Condensed Coconut Milk

In the photo I show Organic Condensed Milk, organic – JJUST TO SHOW YOU you can use Sweetened Condensed Milk if you prefer!

Sweetened Condensed Coconut Milk is non-dairy, vegan alternative made from coconut milk.

A Little History of this delicious confection:

  • Almond Joy bar was introduced in 1964 by the Peter Paul Candy Manufacturing Company of Naugatuck, Connecticut. It was launched as a milk chocolate and almond version of the company’s popular Mounds bar, which had been in production since 1920. Now being offered by the Hershey Company.
  • In the 1970s, the company introduced the famous jingle: “Sometimes you feel like a nut / Sometimes you don’t / Almond Joy’s got nuts / Mounds don’t”.

Top the Coconut Sorbet with a half of an Almond Joy Bar!

HINT: They freeze well!

  • Wrap in waxed paper and place in an airtight container, pop in the freezer.
  • Defrost in refrigerator, or at room temperature if serving within 2 hours.

Karen's Mini Amazing Almond Joy Bars
Fun to make at home with minimal ingredients! Delicious creamy not overly sweet centers with a chocolaty shell. Natural Almonds add crunch and an authentic look. Just amazing almond joy bars to enjoy at home!

Ingredients 

  • 1/2 cup unsweetened shredded coconut
  • 4 tablespoons sweetened condensed coconut milk , love, but can use sweetened condensed milk; organic
  • 1 tablespoon raw honey
  • 1/8 teaspoon pure vanilla extract

Chocolate Coating:

  • 1/2 cup dark chocolate chips
  • 16 natural almonds

Instructions 

  • Add condensed milk and honey to a glass bowl suitable for the microwave. Microwave until just bubbly and warm.
  • Add shredded coconut and vanilla, mix well with a rubber spatula. Set aside for 10 minutes.
  • Line a medium sized rimmed cookie sheet with parchment paper. Water 1 1/2 inch cookie scoop, shake off excess water. With watered hands scoop into the mixture into your palm and mold into an oval shape. Add to the parchment paper and repeat with remaining mixture, watering when necessary. You will have 12 bars.
  • Place the pan in the freezer for 1 hour, until firm.
  • Melt chocolate in the microwave until almost melted, stir up with a rubber spatula. Using 2 forks, dip the ovals into the chocolate to coat them all over; place back on the pan. Place one almond in the center, gently press down.
    Repeat to make 12 Mini Almond Joy Bars. Refrigerate until firm.
  • Store in an airtight container.

    Made these, yum!
    A little sticky, yes use wet hands when shaping.
    All loved them. Put extra in freezer. Took out when needed.
    Will make again thanks.
