Delicious Honey Peanuts coated last minute with a little sugar. Simple and fun to make.

The perfect nosh! Also use as a garnish for a dessert like my Lightened-Up Peanut Butter Cheesecake with Chocolate Biscotti Crust and Honey Peanuts
Ingredients
- 1 tablespoons raw honey
- 1 tablespoon unsalted butter, room temperature (I used organic)
- 1/4 teaspoon pure vanilla
- 1/2 cup peanuts, I used roasted unsalted
- 1 1/2 teaspoons pure cane sugar
Instructions
- Preheat the oven to 350 degrees. Melt the butter in a medium sized glass bowl until just melted, I did so in a microwave. Add the honey and vanilla; mix in well with a rubber spatula. Add the peanuts, mix to coat them.
- Place a piece of parchment paper on a cookie sheet, add the peanut mixture. Smooth flat with your rubber spatula. Bake in the oven for 10 minutes total – opening the oven door and mixing up the peanuts EVERY two minutes. (This ensures even coating.)
- They are done when the honey-butter mixture is absorbed, and they are golden brown – not darker, about 10 minutes. Take out of the oven. Toss them with the rubber spatula and coat evenly with the sugar. Do not toss them again – leave to cool and enjoy.
This is a small batch that can easily be doubled or tripled.
