Doesn’t get more delicious than this! Laced with Onions, Shallots, Garlic and my Fresh Tomato Sauce – it’s my go to sauce for a comforting weeknight meal.
- 1 1/2 tablespoons extra virgin olive oil
- 1 pound ground turkey (lean not white meat)
- 1/2 cup sweet onions, peeled and chopped medium- fine
- 1/4 shallots, peeled and chopped medium- fine
- 1 tablespoon fresh garlic, peeled and minced
- a pinch or two cayenne pepper
- 1/2 teaspoon pure cane sugar
- 1/2 teaspoon Italian seasonings
- 1 tablespoon tomato paste
- 1 cup Fresh Tomato Sauce (see recipe)
Heat 12″ a cast-iron skillet (or you favorite skillet) with the olive oil over medium-high heat.
Add the ground turkey and breakup with a wooden spoon as you sauté.
Let brown, stir up from time to time, about 5 minutes – will not be all cooked through.
Add onions, shallots and garlic, stir up and let them cook with the turkey, stirring a few minutes. Add cayenne pepper, sugar, Italian seasonings and tomato paste and stir until combined. Add the tomato sauce, stir in and bring to a simmer. Cover and cook over low heat 20 minutes. Add salt, add more if necessary.
Add al dente pasta to the skillet and stir to combine. (I’ve used Barilla Gluten Free Linguine.)
Enough sauce for one pound of pasta. (Sometimes I use less pasta… really like having a lot of sauce!)
Serve in a large bowl or individual bowls. Top with basil leaves and grated parmigiano reggiano.
Feel free to use ground beef in the recipe as well.
