Seasonal Lettuces and Vegetables team with the juiciest Strawberries with the perfect Zesty Vinaigrette
Finally the Summer season begins tomorrow!
I’ve been inspired to create this new salad – and have added six other Strawberry Recipes for you to try.
This is a wonderful plant based salad with just-in-season June vegetables and strawberries. I’ve added walnuts for crunch and sliced feta cheese – both add interest and protein.
Add your favorite grilled proteins, grains or beans as well!
A homemade whisked vinaigrette tops the salad. Start by stirring minced shallots and grated garlic with sherry vinegar, pure maple syrup, sea salt and a few cranks of pepper. Whisk in a neutral oil of your liking… and some walnut oil for flavor and depth.
Strawberries are a great source of fiber, vitamin C, and antioxidants. They are low in sugar and calories, and provide a unique combination of essential nutrients, dietary fiber and phytochemicals.
Butter lettuce, or butterhead, is one of the four main types of annual lettuce, widely available in the United States, along with leaf, crisphead and romaine varieties. There are a number of butter lettuce varieties, all of which feature loose heads of sweet, mild, tender leaves that can be described as “buttery.” The two most widely known and available types of butter lettuce in the United States are “Boston” and “Bibb.”
