Whip up a cool and creamy dessert in no time!
In warm weather, a no-bake Refrigerator Pie is a time savor. Celebrate the end of summer with nature’s perfect berry – raspberries!

It is Raspberry picking time ~ I visited Bishop’s Orchard on opening Raspberry Picking Day last week on a beautiful summer day. The best berries are those that are fresh picked while still warm from the heat of the summer sun, hidden in their green vines. Almost seems just a bit too perfect to have been the pure manufacture of Mother Nature!

The berries were bright red, plump and super sweet. Seeing this was opening day, many had some time to still ripen fully, it was fun looking underneath the bushes to find just the right deep colored ones.
Check out your state and take advantage of pick-your-own right from the farmer who grows them!
Since you pick them firm, right off the bushes, they will last twice as long as other types. (I placed mine in paper towel lined glass seal-proof containers in the refrigerator.)

Tips for Picking:
A ripe raspberry is deep color with a plump, soft but firm feel. It will pull free from the plant with only a slight tug. The center will remain on the plant. Keep in mind, raspberries come in many colors: red, yellow, black, purple, so you want to pick the darker shade of whichever it is. Pick only the berries that are fully ripe. Reach in between the stems to grab for hidden berries ready for harvest. Bend down and look up into the plant and you’ll find loads of berries that other people missed!

Health benefits:
Anti-cancer benefits of raspberries have long been attributed to their antioxidant and anti-inflammatory phytonutrients – the number unequaled in other fruits. They have a significant amount of Vitamin C, magnesium and fiber.

I enjoy making the granola for the pie – this one is baked with natural coconut flakes and no nuts.
The filling can easily be whipped together and poured right into the crust to chill, then place in the fridge or freezer.

I’m not a fan of supermarket marshmallows, and prefer a vegan variety, ‘Dandies All-Natural Marshmallow’ from health food stores (unwanted preservatives, colors and gmo’s.)
Vegan and Non-GMO, Ingredients: Tapioca Syrup, Cane Sugar, Filtered Water, Tapioca Starch, Carrageenan, Soy Protein, Natural Vanilla Flavor.
Gelatin (an animal-based ingredient) is one of the main components in traditional marshmallows.

Process Granola to make crumbs, add a little coconut oil and press into the pie pan then freeze until firm
Warm milk, add marshmallows (I’ve used Vegan) and stir until melted
Whip cream, add raspberries and fold into the marshmallow mixture ~ pour into pie pan
