Roast the mushroom caps (on a rack – they don’t get soggy!) add Marinara Sauce, Mozzarella Cheese, Slow Baked Cherry Tomatoes and top with Basil Leaves and Crispy Baked Kale Ribbons

Mushrooms have a heavenly “meaty” texture and savory, irresistible “Umami” flavor.
The perfect lunch, side dish, snack, dinner or appetizer (cut into wedges!)
Nutrition ~ a reason to love mushrooms:
A portobello (also spelled “portobella”) has multiple bright spots when it comes to nutrient value.
Portobello mushrooms have a moderately high amount of fiber.
A serving contains just over 3 grams of protein, about 4 1/2 grams of carbs and just over a 1/2 gram of total fat.
Portobellos take up a lot of space, but they do not contain many calories, making them low energy-density foods.
They contain a mentionable amount potassium, phosphorus, B vitamins and sodium.
Umami is the fifth basic taste after sweet, salty, bitter and sour. Umami (pronounced oo-MAH-mee) is described as a savory, brothy, rich or meaty taste sensation.
What brings out Umami the most?
In addition to the right ingredients, cooking techniques that concentrate flavors by breaking down the protein molecules and glutamic acid bring out the rich flavor of umami. That’s why sautéed, grilled and roasted mushrooms are more savory and flavorful than raw ones.
The darker the mushroom the more umami it contains… hello Portobellos!!
