In this antioxidant salad – there’s a lot of fiber, flavor and some protein.

But, this Red Kale, which is actually more of a purplish hue is gorgeous and very tasty when massaged into the lemony dressing.

The foods we consume builds our bodies from the inside out. A plant-based diet is said to be the best strategy for optimal wellness.
Research from around the world favors the Mediterranean Diet which emphasizes: eating primarily plant-based foods, such as fruits and vegetables, whole grains, legumes and nuts. Fats, animal protein, sugar and alcohol are included in smaller quantities.

The Vegan lifestyle is gaining popularity; as is gluten-free foods (very important for gluten-sensitivities) – but better for the masses?

I do believe in a good balance – and considering making a plant-based diet more important in our every day diet choices… is a good thing!

Personally – I really do like the taste, texture and flavors of fruits and vegetables, they are the balance of my daily diet. It’s important to note that the quality of these choices are important… the freshness (nutrition) and how it’s grown – organically and or non-GMO. Certified organic foods are also non-GMO.

So – if you can add more vitamin-rich fruits ,veggies, whole-grain products, nuts, seeds, herbs and spices, and even cocoa into your diet – there is a big payoff in health benefits.
Added hydration, longevity, more heart-health, limits cancer-causing foods, lighter weight, prevents diabetes and curbs carbon footprint are benefits of a plant-based diet lifestyle.
