Have a juicer – Carrots sorbet is a snap – or purchase freshly pressed carrot juice, run home and proceed to make this simple sorbet! I think it makes a wonderful match for this crunchy, health-laden salad – the quality first course that you would find in popular farm- to – table restaurants. Perfect for a dinner party, or when you want to indulge in the comfort of your home.
Make the best of organic, farm fresh ingredients – and simply julienne them into a bowl, toss with my easy lemony vinaigrette when ready to eat.

There is a rainbow of produce to choose from! I love the mix of breakfast radishes, heirloom colorful carrots, cucumbers, Jerusalem artichokes, shelled peas, kale, lettuces, micro greens with sunflower seeds, hemp seeds and pomegranate seeds tossed in for extra crunch. For a speedy prep, use a mandoline slicer (this is a moderately priced one that does the job!) for the vegetables. I use a mandoline often to slice summer beets paper thin, and to make delectable yuca chips.
