Pumpkin Scones with Pecans, Cranberries and Coconut

Who can resist a warm,  tender and flaky scone chocked full of fruits and nuts?

Pumpkin baked goods are delicious to enjoy year round – not just for cooler autumn mornings. Warm spices – cinnamon and ginger pair perfectly with the moist pumpkin puree.

I love the simple pleasure of home baking – it’s all about the process… and the rewards!  I gather pantry staples, measure dry and wet ingredients, turn on the oven, and anticipate the intoxicating scent that will soon fill the entire house. Scones are a “quick-bread” – after a few swift turns, including cutting the butter into the flour, the dough gets a gentle roll, then cut into wedges and baked. Perfect for a beginner baker.

Barely sweet and irresistible – made from your pantry ingredients.. with a secret ingredient: coconut milk.  Coconut milk adds a nutty flavor, moist interior, and is the key ingredient to the glaze. For the perfect finishing touch – top the glazed scones with pumpkin seeds (pepitas) and a pinch of glittery sanding sugar.

Oats, whole wheat flour, pecans, cranberries and natural flaked coconut add much fiber to these delectable, and easy to prepare scones. The key to the perfect scone is the distribution of the butter – freeze the butter for 20 minutes, and you can not overwork the dough… Flaky and delicious results!
 

Make a batch, and watch them disappear… or freeze some for when you want a snack, or when guests pop over.
