Watermelon Gazpacho ~ Your Summer Cool-Down in a Bowl

An easy Summer soup topped with grated feta cheese and fresh mint ~ it’s light, vibrant and has a spicy kick

A refreshing soup to enjoy for Summer – great for entertaining!

Gazpacho is a cold soup made of raw, blended vegetables – here I’m adding a good dose of watermelon, adding naturally sweet fruit to the mix.

Packed with antioxidants, this chilled soup is perfect for everyday and can be made a head of time. When serving ~ top with feta cheese, garnishes and mint.

To prepare: whirl “base ingredients” in your blender, using just one cup of cubed seedless watermelon. Then squeeze some water out of remaining watermelon cubes: this ensures the soup is thick enough and not watery!

To serve: pour into individual bowls, top with garnishes (which are a component of the soup) : diced cucumbers, tomatoes and watermelon. Then top with mint leaves, and some sliced mint leaves too.
Don’t skip topping with grated feta cheese too! Adds a pleasant zesty touch with a salty tang… perfect accompaniment to the soup.

Ingredients for the soup
Frothy and out of the blender ~ watermelon cubes will be added
Blended together: watermelon, ahi pepper, cucumber, off the vine tomatoes, Vidalia onion, garlic and lemon juice
Serve in individual glass bowls
Don’t skip the grated Feta Cheese garnish! Adds a pleasant zesty touch with a salty tang… perfect accompaniment to the soup.
