Thai Coconut Ginger Chicken in an Instant Pot

Stewed Chicken is so tender and delicious in an Instant Pot! This is a favorite recipe of mine I thought I would share.

Simple and fun to prepare – I pair lots of ginger, garlic and fresh veggies with a flavorful coconut sauce

What’s for dinner?? Try this fabulous Thai flavored recipe and eat it for days. The chicken stays succulent in this rich sauce… but not heavy or too caloric. I always add plenty of healthy vegetables!

Seasonings matter!
Read the recipe to see my pantry staples that just make your food creations taste good! Garam Masala is a seasoning you must try!

Seasonings I used include Garam Masala*, Cumin, Turmeric, Coriander and Hot Chiles.
Onions, Shallots and Garlic are simply sautéed in a little coconut oil.

Take the time to Marinate the Chicken!
I take the skin off the chicken, which I prefer on the bone.
Marinate the chicken in lime juice, LOTS of grated ginger, turmeric, and cracked black pepper.

The meat will just fall off the bone… cooked in a rich gravy

I cook at least 8 pieces of chicken at once in my Instant Pot. It reheats beautifully for days to come.

*Garam Masala: a wonderful spice blend originating from India, primarily including ~ coriander, cumin, cardamom, cloves, black pepper, cinnamon, and nutmeg.
Kalustyan’s in NYC sells Garam Masala Whole – and I whirls in my spice grinder when using, so it’s super-fresh.
Also look for the seasoning at better grocery markets and health food shops.
