All will enjoy your efforts and creativity when you serve these Sweet Potato Tater-Tots – hot out of the oven with a tangy, sweet and hot glaze, and blue cheese sauce to dip in.
Baked not fried! These tots are brushed sparingly with a neutral oil; the tortilla chips have enough fat to add a mouth-feel of flavor. Vegetarian and Gluten-Free.
With the classic flavors of Buffalo Chicken Wings – all won’t be able to resist these little morsels of yum!
For a stress-free game day, make these ahead of time, freeze for a few days and bake until warmed through.
The method: Bake three large sweet potatoes, peel and pass through a potato rice for a creamy texture. Alternately, mash them in a bowl. Sauté sweet onions until translucent, add them to the sweet potatoes with an egg white and seasonings. Refrigerate one hour until cool, brush mounds with an egg white, shape into a tater-tot shape and roll in crushed tortilla chips. Brush them sparingly with a neutral oil and bake on a parchment line baking sheet until crispy on the outside – will be luscious and creamy inside.
Serve the tater-tots with my Honey-Hot Sauce-Butter Glaze – drizzle some on top – serve some on the side for dipping.
A Blue Cheese Dip is welcome on the side for a dunking – a simple recipe with bold flavors.
