Zesty Caribbean Flavors in the meatballs and this creamy, addictive sauce! Gluten-Free and Dairy Free
Just back from Grenada ~ “The Spice Island” and immediately created a spice blend to capture the flavors of the island.
Important spices are allspice, nutmeg, ginger, cinnamon, thyme, spicy peppers and curry overtones.
The blend will add an island-kick to many recipes!
Making your own blend insures freshness, and creates a versatile seasoning with very little salt.
For the meatballs I use chicken tenderloins and pulse them in a food processor with lots of flavor; ginger, scallions, shallots and cilantro or parsley. Yes – you can use “ground chicken” – will come out nice… but grinding your own chicken – the recipe will be superlative!!
Coconut milk teams with fresh chicken broth to make a creamy, yummy sauce – the seasoning insures just the right Caribbean flair.
Make the meatballs, cook until golden in a cast iron skillet – then add lots of onions and cut pumpkin. Caribbean islands use a lot of pumpkin! I found some from Jamaica at a local international food shop – you can use and type of orange squash you like!
Then, add coconut milk, chicken broth and seasoning to the skillet. Cook and add the meatballs and simmer for 15 minutes.
