This quick and healthy soup has definite Asian-notes with Rice Noodles (gluten free), Napa Cabbage, Snow Peas and a good dose of Ginger.

Ginger is known to aid digestion, reduce inflammation, aids with cardiovascular health, relieves muscle pain and contains anti-fungal and antimicrobial compounds ~ ginger might even help you fight off a cold or an infection.

So lets bump up our ginger consumption! I adds a lovely bite and essence to this chicken soup.

As this is a “quick” chicken soup recipe ~ you can poach the chicken on the bone ahead of time, and pull-off and slice the meat when ready to finish the soup. Easy!
I also like to cook a whole 3.5 pound chicken, covered with water and aromatics until it falls off the bone in about and hour, then use the light and dark meat for chicken soup.
I do like a lot of vegetables in my soup ~ this recipe has 2 cups of them.. you can choose your favorites from my list on the recipe.
