Cashew Cluster Crunch

A simple nut crunch snack that is SIMPLE (really!) to prepare and totally irresistible. Puffed Brown Rice adds lightness and crunch – a pinch of tumeric and chili flakes adds interest and a touch of heat.

This is NOT brittle ~ yet a healthy snack with a touch of honey and coconut oil
Bake in a single layer, it will stick together. When cool – break into bite sized pieces

Only a touch of sweetener holds the crunch together – GUILT FREE snacking!

Better than granola (no oats here) – this Crunch is the ultimate snack, and naturally gluten-free.
One bowl preparation – just melt honey, brown rice syrup and coconut oil together, add a pinch of turmeric and chili flakes.

Take off heat, add remaining ingredients: puffed brown rice, flaked-unsweetened coconut, sesame seeds and cashews – I like whole roasted cashews and raw cashew pieces.

Place the mixture on a rimmed baking pan, and pat down into a single layer and bake. That was easy!
I stir it up once as it is baking for uniform browning.

Let cool and harden – then break up into bite sized pieces and devour!

As I was working on creating a nut-snack recipe for a Cambodian dinner, I wanted to add flavors that would have an appropriate pairing to the food. Turmeric and Chilis in the mix of this CRUNCH are essential Cambodian flavors – so this recipe was born.
