An Easy Veggie and Turkey Lasagne Recipe to Master

This Gluten Free recipe has layers of vegetables, marinara, herbed ricotta, light-on-the cheeses and no-boil-ready-to-use gluten free lasagne sheets.

Hearty, comforting, but not too heavy

Lasagne is the ultimate comfort food – and this recipe is lightened up with layers and layers of vegetables. I’m loving a little seasoned ground turkey between the layers!

My inspiration came from a restaurant with a healthy menu ~
True Food Kitchen. I have eaten in two locations – Phoenix, Arizona and Boca Raton, Florida. Their philosophy: “food should make you feel better, not worse.” Founded by Dr. Andrew Weil and his culinary vision. Yep, I even eat healthy when dining out!
Lasagne Bolognese on their menu calls for turkey sausage – which you can use, I chose to season ground turkey as “turkey sausage” has an overwhelming flavor.

I chose to make this recipe Gluten Free ~ but feel free to use the lasagne noodles of your choice.

I have used both Jovial Organic Brown Rice Lasagne Sheets and Barilla “Oven-Ready” Lasagne – both Gluten Free and Delicious.
Barilla Lasagne sheets do not need to be pre-boiled – a life saver!

Cremini Mushrooms, Golden & Green Zucchini and Leaf Spinach are simply broiled eight inches from the heat source
