Quick Herbal Tzatziki Sauce

This Creamy Yogurt Sauce is light, tangy and zesty with herbal notes. Cucumbers are quickly salted, then patted dry and added to the mix.

Ingredients

  • 3/4 cup strained yogurt regular or greek
  • 1 teaspoon fresh garlic finely grated or minced
  • 1/2 cup cucumbers 1/4" dice
  • 1/8 teaspoon sea salt
  • 1 tablespoon scallions greens cut into fine rings
  • 1 tablespoon fresh parsley minced
  • 1 tablespoon fresh mint minced
  • 1/4 teaspoon pink peppercorns ground
  • 1/4 teaspoon sumac
  • 1 teaspoon fresh lime or lemon juice
  • 2 teaspoons extra virgin olive oil (optional)

Instructions

  • Add cucumbers to a small bowl with the salt; rub in. Let stand 10 minutes, then add to a paper towel and squeeze dry.
  • Add cucumbers and all of the ingredients to a small bowl and mix well.
    Refrigerate, covered to blend the flavors. Taste for seasonings. Add EVOO if you like.
