Karen's Bet on Beets with Ginger Smoothie

A nutritious and delicious blend of ruby beets, oranges, apple and ginger. Refreshing with a gorgeous hue!

Equipment

  • 1 nutribullet personal blender or high speed blender

Ingredients

  • 1 1/4 cups beets peeled, about 2/3 of a large one
  • 1/2 cup apple such as Fuji or Honeycrisp
  • 1 cup orange segments peeled, much pith removed; I use Cara Cara
  • 1 3/4 teaspoons fresh ginger peeled
  • 3/4 cup filtered water
  • 5 ice cubes

Instructions

  • Coarsely chop all ingredients. Add all to the nutribullet (or similar), and run for one minute. Invert cap; open, add 5 ice cubes. Secure top and whirl until icy smooth, about 30 more seconds. Juice will be a bit frothy.
    Enjoy!
  • Any remaining juice can be placed in a glass container and refrigerated for up to two days.
