Breakfast Fried Egg Tacos with Karen's Bloody Mary Hot Sauce

Wake up your taste buds with these savory tacos! Sunny side up fried eggs top tacos and a bevy of veggies and Mexican cheeses. Top with my homemade spicy hot sauce for the perfect chile-tang.

Ingredients

  • 4 whole corn tortillas*
  • 1 teaspoon extra virgin olive oil divided
  • 4 large eggs I use pasture raise for flavor and deep orange yolks
  • 12 tablespoons mexican grated cheeses see note

Veggies & Add-Ons:

  • 4 tablespoons avocado peeled, thinly sliced
  • 2 teaspoons scallions chopped on the diagonal
  • 2 teaspoons pickled sliced red onions
  • 1 tablespoon sliced cherry tomatoes multi-colored
  • 1 teaspoon cilantro (or parsley) chopped
  • 1 teaspoon fresh or pickled jalapeño thinly sliced
  • 2 teaspoons thinly sliced radishes I use watermelon radish

Instructions

  • Preheat oven to 350 degrees.
  • Brush your seasoned cast iron skillet with 1/2 teaspoon evoo and the insides metal rings if using (for round fried eggs.)
    Set heat to medium. Add 4 eggs, spacing them (add to center of rings in skillet if using.)
    Cook for two minutes until egg whites have set (yolks will finish cooking in the oven.)
  • Remove the eggs to a plate, wipe the skillet clean, brush skillet with remaining 1/2 teaspoon evoo. Add 4 tortillas and cook for one minute one each side until warmed through.
  • Add the tortillas to a baking tray. Top each with 1 1/2 tablespoons of grated cheese. Top each with the fried egg. Add 1 1/2 tablespoons extra grated cheese around the egg whites and tortillas. Bake in the oven for 5 - 7 minutes; or until the cheese is bubbly and the yolks are cooked to your desired doneness.
  • Garnish and Enjoy the Tacos:
  • Add your desired toppings to each taco and drizzle all over with the hot sauce.

Notes

*Tortillas: I use Vista Hermosa Corn Tortillas. They are gluten free, non GMO and organic with minimal ingredients and NO artificial preservatives. Delicious! 
Mexican Cheeses: Use a mixture of cheeses or crumbled Queso Fresco cheese.
