To a medium sized bowl, add the first 7 ingredients – garlic through lemon juice. Give a big stir with a wire whisk and let stand 15 minutes to macerate the flavors.
Add the mayonnaise and whisk in until creamy. Add the Parmigiano-Reggiano and whisk in.
Measure the olive oil and stream in slowly while whisking until creamy and emulsified.Taste for salt – add if needed.Store in an airtight glass container in the refrigerator. Will keep for up to one month. The recipe can be made as well in a 4 cup food processor.
