An easy sauteed side dish. Fresh cucumbers are very tasty sauteed if you have never tried them!
Photo above paired with:
- 1 tablespoon extra virgin olive oil
- 1 medium local cucumber, peeled, about 1 cup
- ½ teaspoon fresh garlic, peeled and minced
- 4 cups fresh baby spinach, cleaned and dried
- ¼ teaspoon sea salt
Cut the peeled cucumber in half lengthwise. Cut into 1/3 inch half moon slices. Heat olive in a medium skillet over moderate heat. When hot,
add the cucumbers and saute until cooked through and a little translucent, about 5 minutes. Add the minced garlic, stir to combine. Add half the spinach, 2 cups and stir until almost wilted over moderate heat, about 30 seconds. Add the remaining 2 cups with 1/4 teaspoon of sea salt. Stir until just wilted, about 30 seconds.
Remove from heat and serve.
