Pickled Tomatillo Crema

Ingredients

2 tablespoons tomatillos, husked, small dice

1 tablespoon fresh lime juice

1 pinch sea salt

1 pinch sugar

¼ teaspoon fresh jalepeno, minced

½ teaspoon fresh rosemary, minced (optional)

2 teaspoons fresh celery leaves, minced

½ cup low fat sour cream

Instructions

In a small bowl, mix together the tomatillos, lime juice with a pinch of salt and sugar.

Stir, let stand 10 minutes. Add the rest of the ingredients, and mix well.

Place in a covered container and store in the refrigerator.
