I add minced shallots, garlic, extra virgin olive oil, salt & pepper and a pinch of cayenne pepper to roasted heirloom cherry tomatoes and heirloom peppers whose natural sweetness brightens when slow roasted.
Makes a great side dish, or even a topping for thick toasted bread slices… bruschetta. I’m serving it under the swordfish for a healthy and gluten free meal.
Compound butters: French: beurre composé, are mixtures of butter and supplementary ingredients. Primarily, they are used to enhance flavor in various dishes, in a fashion similar to a sauce. Keep frozen and slice when using.
Living in Connecticut, Local Swordfish is most plentiful in July, August and September.
