Raspberry, Coconut, Lemon and Poppy Muffins, Gluten-Free

Raspberries are center stage in these quick and delicious muffins with lightened-up ingredients.

Nice flavors which work especially great together:

Raspberries (whole and puree), Coconut (oil and grated), Lemon (juice and grated rind), and Poppy Seeds.

Enjoy this master gluten-free recipe with other ripe, summer fruits. The glaze is a nice addition for a color-pop and accentuated flavor. They are not too sweet for breakfast, brunch or a snack (or… a little bite of sweetness after dinner).

Many healthy ingredients I am baking with these days:

Organic butter, coconut oil, expeller pressed neutral oils, gluten- all purpose flour (Arrowhead Mills), and farm- fresh eggs (try your local farmer’s market).
