This is an intense and creamy tzatziki ~ grated beets transform it into this bright rose pink color.
Make this beautiful colored Beet Tzatziki and use it as a sauce, dip or spread. It’s simple to prepare ~ Steam Beets and grate into a bowl. Add seasoning while warm: Finely Grated Garlic, Sumac Spice, Sherry Vinegar and Sea Salt. Fold in some Coarsely Grated Cucumber, then Greek Yogurt and Chill.
Tha Tzatziki can be garnished with a multitude of fresh chopped herbs; I have used parsley and oregano from my garden – mint would be fabulous too.
The chicken tenderloins are marinated in extra virgin olive oil, sumac spice, smoked paprika, dried oregano and salt & pepper. Tenderloins are, well – tender; they will not dry out as quickly as chicken breast. Simply skewer and grill. Top with chopped fresh herbs to your taste.
The word Tzatziki derives from the Persian zhazh, that means herb mixture. Recipes similar to Tzatziki are very popular in Middle Eastern countries, Greece, and Southern Balkans. In Turkey, Cacik is a variation of Tzatziki with Sumac spice, fresh mint, and water: served as soup or side dish.
This is a versatile sauce that is the perfect accompaniment to many Mediterranean dishes. You can also slather it on your sandwiches; or simply use it as a dip with warm pita and your favorite vegetables.
