Quick Marinara Sauce with Sliced Olives
Ingredients:
- 2 tablespoons extra virgin olive oil
- 4 medium cloves garlic, peeled, sliced thinly
- 2 cups marinara sauce, home made or your favorite brand
- 2 tablespoons kalamata olives, pitted, sliced
- 2 tablespoons green olives, pitted, sliced (such as Castelvetrano variety)
- 1 pinch cracked black pepper
- 1 pinch red pepper flakes
- 2 tablespoons water
- 1 tablespoon flat leaf parsley, cleaned, stemmed, chopped
Method:
Heat oil in a 1 quart heavy pot over medium heat. Add the sliced garlic, stir until fragrant, and just starting to turn golden brown, about 1 minute. Remove from heat a moment and add the remaining ingredients except parsley. Reduce heat to low, and cook the sauce for 10 minutes to blend the flavors. Add 2 T. water and the chopped parsley.
