Little Orange Sauce with a lot of Flavor
Ingredients:
- 1 ½ cups citrus juice, orange mostly, lemon & lime
- 1 teaspoon fresh garlic, peeled and minced
- ½ teaspoon smoked paprika
- ½ cup chicken stock, home made or your favorite brand
- 3 tablespoons unsalted butter, cold
- ¼ teaspoon sea salt
Method:
Squeeze citrus, remove all pits. add to a small non reactive small skillet or pot. Add garlic, smoked paprika and chicken stock. Bring to a boil, reduce heat to medium. Reduce by half, about 3/4 cups left. Add salt, swirl in cold butter 1 tablespoon at a time over very low heat. Do not boil. Swirl in butter slowly to emulsify.
