Latin Style Spice Mix for Poultry
Marinate a whole chicken with lime juice, rub all over with this aromatic spice mix and roast.
- 1 teaspoon ground cumin
- 2 teaspoons thyme, or italian seasonings
- ¼ teaspoon tumeric
- ½ teaspoon cinnamon
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt
- ½ teaspoon fresh cracked black pepper
- 1 ½ tablespoons light brown sugar
1 lime, juiced
This is more of a method than a complete recipe. Mix all spice ingredients together and reserve. Wash and dry a whole chicken, place in a large plate. Squeeze lime juice all over the chicken, place the lime in the cavity, tie up with string. Let marinate 30 minutes.
Preheat the oven to 425 degrees. Blot the chicken with paper towels, spray with oil (will enable the seasoning to stick). Use half of the seasoning mix, rub all over the chicken very generously. Place on a v-rack in a roasting pan. Add a mirepoix of chopped vegetables on the bottom of the pan - onion, celery and carrots. Roast for about 20 minutes, the chicken will be lightly browned. Carefully turn the chicken over, turn heat down to 350 degrees. Roast breast side down for another 20 minutes until lightly browned. Carefully turn over, so that it is breast side up and continue to cook until crisp and done. When the vegetables have browned, add 1 cup chicken broth to make a pan gravy.
Let chicken cool, cut and serve. Strain the vegetables from the pan gravy. Add 1 T. cold butter to warm pan gravy if desired and serve.
Makes enough seasoning for 2 whole chickens. Store remaining spice mix in a glass jar in a cool dark place.
